Jollof Rice
You need: 1 jar of Molli´s Jollof cooking sauce
500g of easy cook basmati or long grain rice
Some butter or 1 serving spoon of oil
Salt
Chopped chives to garnish. Serves 3-4
Directions:
1. Bring 2-3 cups of water to the boil. Add washed rice.
2. Now add jar content, stir well and allow to cook until rice is soft.
3. Add the vegetable oil or butter and stir well. For a more authentic taste and flavour, add some MOLLI'S JOLLOF SPICE. Taste for salt.
4. Simmer for about 5 minutes, garnish with chopped chives and serve hot with grilled chicken and steamed or stir-fried mixed vegetables.
Pasta with a Kick!
You need: 1 jar of Molli´s Jollof cooking sauce
500g of sphagetti
300g minced lean beef
1 serving spoon of vegetable oil
1 small onion (chopped)
Salt
Chopped chives to garnish. Serves 3-4
Directions:
1. Heat oil in a sauce pan, add chopped onions and beef. Allow to cook through. Add a pinch of salt and stir well until meat is cooked through.
2. Now add jar content, stir well and allow to simmer for about 15 minutes under low heat.
3. Simultenuously cook spaghetti by adding to already salted boiling water. Allow to cook until pasta is soft. Drain excess water.
4. Serve pasta and sauce immediately with steamed vegetables.
Sautée Vegetables
You need: 1 jar of Molli´s Jollof cooking sauce
Brocolli
Courgettes
Carrots
Yams/potatoes
Some salt.
Directions:
1. Wash and chop the vegetables into bitesize chunks.
2. Steam the courgettes, brocolli and carrots. Set aside. Simultenuously boil the chopped yam/potatoes.
3. Transfer all the cooked vegetables into a large sauce pan. Add some Molli´s Jollof cooking sauce and sautee for about 2-3 minutes. Ensure the sauce is well distributed with the vegetables. Taste for salt.
4. Cover the pan and allow the vegetables to steam for a further 2-3 minutes. Serve hot.
Note: You can use any vegetables of choice in this recipe
Spicy Fresh Fish Stew
You need: 1 jar of Molli´s Jollof cooking sauce
2-3 medium fresh fish steaks (use any fish of choice)
1 small scotch bonnet chilli pepper (optional)
1 serving spoon of vegetable oil
Some salt to taste
Directions:
1. Wash fish steaks and rub with a pinch of salt and set aside.
2. Heat oil in a sauce pan and add content of a jar of Molli´s Jollof cooking sauce. Add some hot water to loosen sauce, also add the scotch bonnet chilli whole if using. Simmer for about 5 minutes and add the fish steaks.
3. Cover and allow to simmer until fish is cooked. Drizzle with some oil. Lift the sauce pan with content and swirl to stir-in the oil.
4. Taste for salt. Serve hot with other soups, rice or pasta, boiled potatoes/yam.
Note: *You may use fried fish in this recipe instead of fresh fish.
Quick Chicken Stew
You need: 1 jar of Molli´s Jollof cooking sauce
300g of dices chicken breast
1 small onion (diced)
1 serving spoon of oil
Salt
Chopped chives to garnish Serves 3-4
Directions:
1. Heat oil in a pan, add the diced onions and allow to brown.
2. Add the diced chicken and allow to cook through. Add a pinch of salt and stir well.
3. Then add content of a jar of Molli´s Jollof cooking sauce. Stir in making sure the sauce is well distributed.
4. Turn the heat down and simmer for about 10-15 minutes. Taste for salt. Garnish with chopped chives and serve hot with steamed rice, pasta or bread.
Note: *You may use pre-cooked/grilled pieces of meat instead of chicken breast.
Melon/pumpkin seeds Soup
You need: 1 jar of Molli´s Jollof cooking sauce
100g of ground melon seeds
1 small onion (diced)
1 serving spoon of palm oil (or any other vegetable oil)
1-2 bunches of spinch. Washed and chopped.
Some salt to taste
Smoked cod/haddock chunks.
Directions:
1. Mix the ground melon with some water to make a pasted. Set aside.
2. Heat oil in a pan, add the diced onions and allow to brown. Add dollops of the melon paste, a pinch of salt and stir well.
3. Then add content of a jar of Molli´s Jollof cooking sauce. Stir in making sure the sauce is well distributed. Add the smoked fish pieces and allow to simmer for about 10 minutes. Adjust thickness by adding some hot water.
4. Then add the washed spinach leaves. Cover the pan and simmer for a further 5 minutes. Taste for salt. Serve hot with pounded yam or boiled rice.
Note: *You may add other pre-cooked/grilled pieces of meat or dried fish in step 3.
Mushy Beans with Fried Plantain
You need: 1 jar of Molli´s Jollof cooking sauce
500g of brown cowpeas (brown beans), hand picked and washed.
1 small onion (diced)
1-2 serving spoon of palm oil (or any other vegetable oil)
1-2 plantains
Some sugar and salt to taste
Directions:
1. Place washed beans, chopped onion and 4 cups of water in a pressure cooker. Add the content of 1 jar of Mollis Jollof cooking sauce. Cover and cook the beans under pressure for 20 minutes.
2. Carefully open the pressure cooker and add the oil. Add some hot water to adjust the consistency of the beans.
3. Then with a wooden spoon, rigously stir the beans to mash them up. You may add some more hot water to get your preferred consistency. Add a little sugar and a pinch of salt. Allow to simmer for another 10 minutes.
4. Serve with some slice fried plantain.
Note: *You may add some sweet corn in step 2.
